    Spring Greens Salad

    This salad is a great recipe to create with your kids! Let them help in the kitchen, choose their toppings, dressings and just be careful tossing, so the salad ends up on the plates. Have fun!

    Servings: 6-8

    Ingredients:

    • 8 cups lettuce, spinach, mesclun, or other mixed greens, torn into bite size pieces

    Topping Options:

    • 2 green onions, chopped
    • 1 red onions, cut into thin rings
    • 1 cup bean sprouts or radishes
    • 1 cup celery, chopped
    • 2 cups mushrooms, sliced
    • 1/2 cup bacon, cooked and crumbled
    • 2-3 hard cooked eggs, sliced
    • 1/2 cup raisins
    • 2 Spring apples
    • 1/2 cup walnuts, or pumpkin seeds
    • 1/2 cup kalamata olives
