    Tangy Jam Dressing

    What a fantastic and new way to make salad dressing! Most store bought dressings contain many preservatives and ingredients that one cannot even pronounce!     Tangy Jam Dressing

    3 Tbsp 100% fruit jam*
    2 Tbsp lemon juice (approx 1 lemon)
    1 Tbsp dijon mustard
    1 Tbsp apple cider vinegar
    1/4 tsp sea salt
    1/8 tsp freshly cracked pepper
    7 Tbsp extra virgin olive oil**

    In a small bowl, combine jam, lemon juice, dijon mustard, apple cider vinegar, sea salt and pepper. Whisk to combine. While whisking continuously, slowly stream in olive oil. Continue to whisk until fully combined.

    *Look for a jam that is 100 % fruit to avoid any added sugar. Try different flavors for completely different results! Apricot is delicious for a salmon salad. Strawberry is lovely over a salad that is topped with with cheddar.

    **Substitute unrefined walnut oil or flax oil for extra virgin olive oil to obtain different results. Walnut oil is delicious for a salad that contains fennel.
